What is the Star Anise?

Star anise is an evergreen tree from the plant family Schisandraceae. It is the star shaped fruit of the illicium verum tree, which is native to Vietnam and China. Star aniseed primarily grown in Vietnam by farmers from ethnic minority communities in the northern highlands, and it is traded and consumed globally. The star-anise tree produces star-shaped fruits that turn rust-red when ripe. These fruits contain amber-colored seeds on the inside. Both the seed and the fruit husks are used as spices in cooking.

Vietnam Star Anise autumn crop 

Autumn harvest flowers begin in September and continue until the end of October each year. When the sun was no longer stiff and the first rains of the season began to fall, people in the highland district of Lang Son began to harvest anise.

This crop produces more fruits and has a better attar than the previous one. After picking, the fruit is dried at temperatures ranging from 30 to 40 degrees Celsius. Its color then shifts from red brown to dark brown, forming star-shaped patterns and revealing shiny yellow brown seeds.

Harvest begins in March and lasts until April. Spring crop Star anise is not better than Autumn crop. Star shaped smaller than Autumn crop, with some star shaped not open but still eight points and a seed in each.

Star anise oil is a fragrant oil that is commonly used in cooking, perfumery, soaps, toothpastes, mouthwashes, and skin creams. Shikimic acid, a chemical intermediate used in the synthesis of oseltamivir, is extracted from approximately 90% of the world’s star anise crop.

The flavor of star anise is distinct, sweet, and aniseed-like, with a fresh, pleasing aftertaste. The aroma of star anise is reminiscent of fennel and liquorice.
