What is desiccated coconut? | Viet Organic Agro

Desiccated coconut is a dehydrated form of white coconut meat made from freshly selected matured coconuts and is available in granules, flakes, shreds, or chips. It is also available in two varieties: high fat (minimum 60% fat) and low fat (maximum 50 percent fat). These products of Viet Organic Agro are unsweetened and do not contain any preservatives or additives. Therefore, they are most ideal for use as fillers, toppings and as ingredients especially for food manufacturers.

What is desiccated coconut?

Desiccated Coconut is the grated, dried (3 percent moisture content maximum), unsweetened fresh meat or kernel of a mature coconut fruit. They are classified according to their cutting size, such as fine grade and medium grade, with fine grade having a smaller particle size than medium grade.

The following are the desiccated coconut processes:

  1. Coconut husk removal
  2. Coconut shell removal
  3. Removing the thick brown coconut skin
  4. Washing white coconut meat to remove foreign matter
  5. Blanching white coconut meat to reduce the number of microorganisms to a safe level suitable for human consumption within its shelf life
  6. White coconut meat, cut into desired size
  7. To reduce the moisture content of the grated white coconut meat, use hot air to blow dry it
  8. Cooling of DC
  9. Sieving desiccated coconut to separate desiccated coconut into desired sizes
  10. Packing DC

A thousand coconuts should yield about 130kg of DC. Desiccated coconut production is arduous because the removal of coconut husk, shell, and skin are done manually or semi-automatically, depending on current technology.

How to identify a good quality DC ?

A high standard DC should be white in color with no yellow specks, black spots, or other discolorations. It should have a sweet coconut aroma, a mild coconut flavor that is not rancid, and an even particle size distribution.

What exactly are the black spots on Desiccated Coconut?

Back spots are foreign substances discovered in those products. These foreign materials primarily consist of grated and dried coconut skin that has been cut and dried alongside the white coconut meat. There is no such thing as perfection; an error margin of no more than 4 pieces of black spots in 100 g of DC is acceptable.

Low fat or high fat Desiccated Coconut?

The fat content is what gives Desiccated Coconut its value. It is classified as either full fat (high fat) or reduced fat (low fat). A full fat DC contains at least 60% fat; anything less is considered a reduced fat DC. Full fat DC is more expensive than medium fat and low fat ones.

Packaging and storage

To keep away from the atmosphere’s moisture, DC are packed in multi-ply kraft paper bags with inner sealed polythene. Viet Organic Agro produce DC being available in 7kg, 10 kg, 25 kg, and 50 kg bags. Desiccated Coconuts should be kept in a cool place.
